All in one veg rice type dish?

DS2 is cooking for a crowd tonight. He's making a SE Asian chicken dish. I rashly said I'd do a side mainly to make sure veg feature somewhere in the meal

Now I'm all out of enthusiasm and wondering if I can just add some veg and spices to rice while it cooks.

Does anyone have a favourite way to make a tasty vegetable rice?

Can you just do some greens? Stir fry a bit of sliced onion, then garlic ginger chilli, add some green beans/broccoli and continue until cooked.

What about stirfry noodles ? You can add veg and any flavouring (spicy , sweet, savoury).

Egg fried rice ? Do add sesamie seeds and sesamie oil as that really makes it special.

I find stir-fry for a lot of people a nightmare. The pot's not big enough and I end up with it all over the cooker.

You can saute the veg then add rice and water until it cooks (3 water x 1 rice and levar open), or juts boil the rice separately and then add to the stir fried veg while still in the pan

But probably would avoid experimenting with rice if cooking for a crowd. I'd add the ved in the form of steamed fine beans which can also be sautéed or tender stem broccoli or pak choi with garlic.

If it helps, cook elements individually then combine in your serving dish or a large bowl then give a quick microwave blast to heat (you could serve in 2 bowls if your microwave isnt huge)

But you have some other really fab suggestions anyway.
