On a sunny windowsill or in a paper bag with some bananas, which is quickest?

With Bananas. Don't need the bag the hormone that the bananas give off spreads a long way.

The gas you are thinking of is ethelene, same thing that comes out of car exhausts in small doses. Ripe bananas give off ethelene, as do apples. By putting them together in a paper bag you trap and concentrate the gas levels. Putting them in the sun also helps the process.
