Easy salmon recipe

I've just had a dinner for 5 people land on my plate tomorrow!
I really want something light, so thinking salmon? Would love any recipes for something super easy (maybe a traybake?) that won't take too much time/effort to prepare.

If it doesn't need to be something formal, could you make a salmon pate (ie whizzed up with cream cheese and seasoning) and then serve it with good bread/crackers and crudites?

Or maybe salmon linguine - decent pasta with salmon pieces and one of the fresh sauces you can buy ready-made?

Salmon, coat with whatever marinade you fancy (buy a pre-made jar), bake. Serve with rice and veg. If I was doing something like harissa paste I might do peppers and tomatoes, fajita style seasoning would push me towards peppers and onions, miso or gochujang I’d do something green like broccoli. You get the idea.

I probably serve this two or three times a month, but the fish, marinade and veg changes (and often I do the fish plain for the kids). It’s one of my quick and easy meals. You can do it all separately, or buy the rice pouches but you can also do it as an all in one traybake (off the top of my head 160C Fan, 40 minutes covered 10 minutes uncovered for basmati rice, 180C fan for brown rice and maybe ten minutes longer but I’d double check that) add the fish and veg in at the appropriate time. So if it’s a side of salmon probably you’d do the full time but individual portions I’d probably pop in when you uncover the rice (hopefully that makes sense)

Baked salmon, mash or colcannon, steamed tenderstem broccoli and some sautéed kale with garlic (maybe skip the kale if you decide to do colcannon).

This is very easy and I always get compliments on it - oven baked salmon with lime juice and harissa. You can make the marinade ahead, and it only takes 20 minutes in the oven. Looks festive too.

We all like this salmon tray bake, but I do it all on one tray in stages rather than par boiling the potatoes (saves a pan). I also add more veg, cauliflower and red onion are especially nice. Sometimes I use individual fillets of salmon instead of the side, in which case they only go in for the last 12-15 mins ish.

Salmon and pesto wrapped in foil and baked is lovely. With some potatoes and veg on the side. We had that last night, so today I had leftover salmon stirred through pasta with lemon juice, olive oil, capers, peas and cream. Bloody delicious.
