Leg of lamb that can be prepared in advance and chucked into one pot

Has anyone got any foolproof recipes?

I have got people coming for lunch on Christmas Eve and I can marinate the lamb tomorrow night and chuck it in the oven but I don't want to be faffed with roast potatoes etc, I just want to be able to have a slow roast ready for lunch which I can serve from the pot with rice, because I have to do stuff in the morning and don't have time to concentrate on cooking, I want to be able to stick it in the oven at 8 and have it ready for about lunchtime.

Any brilliant ideas?

I did this yesterday - it went down really well.

Roasted it all day on the potatoes. Served with fattoush and chickpea salad and various dips and stuff.

https://www.recipetineats.com/slow-roast-leg-of-lamb/ She puts tons of effort into the recipes she publishes so if you take the time to read and follow them to the letter, they are absolutely foolproof.

Her massaman lamb leg is also absolutely delicious, very mild, have done that lots with veg and even people who "don't like curry" love it it's not really even spicy imo. Can't remember exactly how long it takes to cook tho but will easily come up if you search the site.

All the best x

Slow Roast Leg of Lamb

This Slow Roast Leg of Lamb is going to take your next Sunday roast to a whole new level! Ultra tender meat, this is incredibly easy and very forgiving.
