What can I do with shredded chicken.

So this afternoon I will have shredded 3 chicken legs.

I know I can cool it and freeze it but I just wondered what you lovely people can suggest.

Long story, my dad is visiting me on 22nd and staying overnight. I got a supermarket shop including some chicken legs that I intend to roast.

But then I checked the use by date and it was 22nd so I have ordered new ones and put the chicken in the slow cooker. There is no room in my freezer for the legs but I can squeeze shredded chicken in to it in a bag.

I don't have any bread in the house. I know I could easily do a salad. I don't have pastry and due to arthritis I can't make any.

I have peppers, tomatoes, cherry tomatoes, onions, spring onion, large mushrooms and a fairly well stocked cans cupboard.

Fajitas- wraps with chicken, peppers and onions cooked with Mexican spices, baked with salsa and cheese on.

You could use the chicken, veg and tinned tomatoes to make a pasta sauce.

Can you get some tortilla wraps? Do you have any spices?
Chop all your veg and spices in a pan with a tin of tomatoes for moisture.
Throw in the cooked chicken. And cooked rice if you have any, I use the microwave mexican rices for ease.
I like to sprinkle cheese on top, wrap then toast in in a pan.

I also add avacado, a spicy sauce and sour cream but whatever you have in the fridge will work

Chicken stir fry if you have garlic, soy sauce and rice or noodles?

Pasta salad? Add sweetcorn and mayo or pesto and diced cherry tomato.

Roast the sliced veg then add the chicken and cover with a layer of bachmel topped with cheese for a gratin.

Can your father make pastry? If not, either buy some or order on Deliveroo from a supermarket, and he can roll it out when he arrives.

I don’t eat meat but a chicken pie would be the nicest thing to do with shredded chicken.

(Also, unless you are both unable to eat it, you really need a couple of hearty loaves of bread for his visit, so he can make himself an easy snack. Otherwise you’ll be preparing endless meals.)

Nasi is a good call, thank you. And the Mexican ones, I do have some flour tortillas.

@ScoutOfTheSoftHeartsClub He probably can (the Hospice looking after my mother ran a cookery course for men of a certain age) but the chicken is going to be eaten today.

He is only staying one night, I have dinner and breakfast planned. He mostly only eats breakfast and one other meal.

Try sticking it back together. I’d be curious to see if you got a complete chicken there…

Well as it started out as 3 legs it would be an odd chicken.

In the end I tray baked some veg and ate it with that. I know that's a bit boring but I have more chicken to cook so I'm saving the suggestions.

A lovely chicken and veg broth, also good for keeping the winter germs at bay 😊
