Urgent Yorkie advice

My mini Yorkies are coming out as one lump (no delicious chewing centre) slightly crispy and not like a small Yorkie at all.

What am I doing wrong?

Meant to say, my normal sized ones are great. Just the minis. And cooked in beef tallow.

Searingly hot oil and half the mixture you think they’ll need - they need room to puff up so if there’s too much mixture they get kind of stuck and don’t get the lift you need.
