this is fab, easy, fab and impressive too

enjoy

ingredients

225g/8oz Hobnobs
100g/4oz butter, melted

300g/10oz white chocolate, chopped
200g soft cheese (philly full fat) room temp
25g/1oz caster sugar
500ml double cream

line 23cm round loose base or springform cake time

make biscuits into crumbs and mix with melted butter
spoon and press into base of tin and chill in fridge while making the filling

melt chocolate in bowl over simmering water and leave to cool until tepid

beat soft cheese and sugar together until smooth and then stir in cooled chocolate

whip cream into very soft peaks and gently fold into chocolate mix

spoon into tin, smooth over top and pop in fridge for at least 2-3 hrs but at least overnight

take out of fridge 15-30 minutes before serving

I made this for the first time last week. It was the most scrumptious thing ever - far and away the best home-made cheesecake recipe I've tried, including Nigel Slater's baked one, which is pretty smooth and yummy too but doesn't surpass this.

The only problem is - I'm addicted Made another yesterday and it's already half gone!

Thanks so much for the recipe, though I may have to come back and insult you if I put on a stone before Xmas

I made it, I ate it, I LOVED it, I felt sick afterwards, waited til i was ok again, I ate more, I loved it, I ate it, I loved it.....

Tried this recipe with the hobknob base and with digestive base and just want to say that i much prefered the latter

thanks guys, I've 3 to make for over christmas - never fails to impress

meltedchocolate - the digestive base is a touch too sweet for me with this one but I use chocolate digestive base for my chocolate bannoffee so I can't claim that I don't have a sweet tooth

just to let you all know guys you can tart this up for christmas dinner with redcurrants/raspberries/blackcurrants/strawberries on top with icing sugar dusted over the top - VERY simple but effective

guys just to let you know Tesco is doing white cooking chocolate 150g bars for 97p now - they work brilliantly in this (you need 2) I made it last night and it went down a treat as usual

dizzy when I make it I use Tesco own brand of white choc 1.09 for 200g,
works perfect yummy as usual,
although found a recipe for a baked white chocolate cheesecake it was yummy too, and I'm torn between the two now!

Yeap and actually it uses less chocolate & cheese than the baked one,
it really is yummy, now I'm sorry I have bought ingredients to make a Baileys one, and I bet my family will be disappointed as I have now become the full time "no its ok Plumbum will do white choc cheesecake" for any family occassion
oh why do I do this to myself, although I always keep plenty of the Tesco choc in, you should try it, great value and yummy
