A great christmas Eve curry recipe

Hosting on Christmas eve and fancy making a curry. However, I’ve never successfully made a tasty curry so looking for recipe recommendarions.

Criteria:

Veggie friendly
Not too complicated (amateur cook!)
Simple, easily accessible ingredients (Lidl, sainsburys)
Not too spicy
Delicious

Can anyone help please?

Today I made lamb and veg curry but easily made vegan.

cook onions slowly until soft and golden, put these in a food processor with garlic, fresh ginger, fresh red chilli, turmeric and coriander powder along with fresh coriander, salt and some oil to blend. Whizz to a paste

pan fry some more onion, add the paste, more garlic and chopped ginger to taste, chickpeas, cubed squash, mustard seeds, cardamom seeds, garam masala, sugar to taste and salt, chopped tomatoes and some vegetable stock. Cook until squash is tender and add spinach to wilt plus chopped coriander. Vegan, if you need gf don’t include the mustard seeds, check but I think cumin seeds are gf and will work. If you don’t like coriander use curry leaves, in bigger supermarkets not Lidl.

if you don’t need vegan, using ghee adds extra flavour and you can add sour cream at the end

You need spices, but nothing that an ordinary supermarket wouldn't have.

Nigella's mattar panner is good and very easy. I put more spices in than she does though, as it's very mild. That and a mixed vegetable one (Jamie Oliver has loads of recipes) would be a real feast.
