Hi!

I bought gnocchi on impulse a while ago and it’s been in the pantry ever since. Needs eaten before Christmas.
Any suggestions for what to eat with it? Google just suggests butters, etc. I was hoping for something most substantial!

My first gnocchi recipe was this one - I love it.

Now if I'm not making this I make bolognese as normal, but instead of pasta will have gnocchi that's done in the air fryer (a spoonful of oil, garlic granules, Italian powder and a few Italian herbs) to bake/roast it. Nicer than boiled imo.

I like cooking up pumpkin (or butternut squash) then mashing it, heating it through with cream, sage leaves and nutmeg, so it forms a beautiful creamy pumpkiny sauce.

I’ve posted this recipe before on a broccoli thread, but I love it.
chop a bag of tenderstem up and boil for around 4 mins, add gnocchi and cook for 2 mins / until gnocchi float to the top.
meanwhile, toast some pine nuts.
drain gnocchi and broccoli, stir through pesto and then pine nuts.
Serve with chili flakes and Parmesan.

My teen boys love this recipe. It only takes 10-15 mins prep time then in oven for 40 mins. Feeds 5-6 generous portions.
Chop up 3 peppers. I do 1 red, 1 yellow and 1 orange. Chop up 3 large chicken breasts and fry in 1 teaspoon of olive oil. Add peppers and chicken to a very large oven baking tray 📥 add the packet of gnocchi, add a squirt of garlic puree and a tablespoon of tomato puree. Add 2 chopped up mozerella balls. Make 1 pint of chicken stock. Pour into baking tray over top of everything else. Add 2 pots of red pesto and 1/2 of a small pot of double cream. Mix around a bit. Grate over a bit of parmesan. Cook in oven for 40 mins. It takes me under 15 mins prep and taste like I've spent all afternoon making it. I serve it with garlic bread and always get empty plates.

Clodagh McKenna (sp) has a recipe that’s easy. Frozen peas slightly defrosted, fry in a pan with olive oil, until wilted, stir in some pesto and add crème fraiche until you have a sauce. Mix this with the cooked gnocchi and sprinkle with basil. My daughter does chorizo either chilli flakes and in a tomatoes sauce, it is always so lovely. She grills the gnocchi so it has a bit of crisp to it. One of my favourite meals.

I've asked MN before for recomendations for good supermarket gnocchi and got nowhere. Any feedback from you or others would be welcome.

Best way to cook gnocchi, imo, is fried in plenty of butter.

Edited to say I use shop bought (but usually fresh) gnocchi rather than make it from scratch.
