Carrot cake recipe

I'm trying to find a recipe for Carrot Cake.
All the ones I've found have the addition of bananas..applesauce or dried fruit.
I'm not sufficiently confident to attempt a recipe by just omitting these item.
I just want made with carrots and the frosting made with cream cheese

Do you not like any dried fruit? You can literally just leave them out of this recipe. Or substitute with a different dried fruit. It will just make your cake wver so slightly smaller if you leave them out.

This does say the nuts and raisins are optional. I add sultanas. I have also missed out orange zest as I had no oranges

I hope you enjoy it. I've also used that recipe to make muffins and queen cake sized buns which are handy for the freezer.
