Bday cake ideas for MIL

MIL’s birthday falls around Christmas so it’s always manic and often gets a bit lost. I’d love to make her a fairly simple single layer round birthday cake that I can freeze and then just do a really quick decoration. I usually do a carrot cake and then use the pots of pre made cream cheese icing.

But does anyone else have an idea for flavours / types of cake that work well without the sandwich element?? She’s not a big chocolate or coffee cake fan.

Can I turn a lemon drizzle into something a bit more fancy?? Any other ideas? Thanks!!

I’ll ask FIL if she has a favourite but I know she likes a lemon drizzle but it doesn’t feel very birthday cake-y to me so after ideas to level it up a bit??

I’d make a lemon cake with lemon buttercream icing and decorate with those candied lemon slices you used to get at Xmas. Lots of recipes for multi layer cakes like this on the internet and you could scale down to make a single layer cake.
