IMO there is not much better than pasta and pesto
or rice salad made with pesto

How do you do the rice salad with pesto?

Spread it on toasted baguette or focaccia with some grated cheese on top, optionally add a few mushrooms, tomatoes, peppers.

green soup - fry onions until clear in olive oil, add some risotto rice until it is clear, throw in some courgettes, add a lot of stock more than you use for risotto, cook til rice is soft, add a couple of large spoons of pesto at the end, plus some parmesan and hey presto green soup.

Pesto chicken with parmesan and pine nuts is a firm favourite in the heels household. As is prosciutto melt - pesto on ciabatta topped with prosciutto, sun dried toms, mozzarella and then toast under grill.

to do the rice you just cook rice and put pesto on it, then eat it cold

pesto on pittas then grilled with melted cheese to make a kind of pizza is v nice

I second the idea of stirring some into a soup just before serving. A nice chunky soup with carrots, potato, beans, etc.

Chicken breasts sliced thinly and spread with pesto and mozzarella, then rolled up, secured with a cocktail stick and baked in a hot oven.

I like it just on toast.

I do a chicken or quorn pasta thing with creme fraiche, pesto, cherry toms & onions which is nice.
Also add it to a rice & pepper dish. We get through a lot of pesto.

Those huge mushrooms, stuffed with goats cheese, the drizzle over a big spoon of pesto and grill.

Use it instead of tomato based sauce on a pizza.

I second the putting it on pizza idea - buy a good cheese pizza, and add some pesto and sundried tomatoes and maybe extra mozzarella.

clean the sides off with kitchen roll and cover the top of the pesto with a layer of oil and it will keep in the fridge for an aaaaaage.

New potatoes crushed with pesto (cook potatoes, then squash them up with a generous helping of pesto)

Pesto Rice - cook rice, add cooked sweetcorn and peas, mix up with a couple of spoons of pesto.

And the best pesto pasta:

Cook pasta. Add pesto and halved cherry tomatoes to the pasta while its still hot so cherry tomatoes cook a bit. Then add lightly toasted pine nuts and serve. very yummy.

Its also great added to salad dressing as long as you're not going out anywhere and breathing on people soon afterwards
