Blue Cheese - inspiration

Morning All
I have a HUGE block of Gorgonzola (the milder one) and need some inspiration for what to do with it (aside from just with biscuits). Looking for several main meal and lunch ideas (ideally cooked) and recipe suggestions.

It's really nice melted in creamy mushroom soup. Also nice in a quiche. I don't eat meat but my oldest does and loves it on top of steak.

I crumble mine into green soup, so broccoli and Stilton, or added to leek and potato soup.

I either stir gorgonzola into freshly cooked pasta or make a bechamel sauce and put it in that then add to pasta. Add a jar of artichoke hearts chopped up and toasted pine nuts

Mayo, loads of garli, black pepper. Spread it on nice toasted slices baguette and top with sliced grapes. My fave "party" food. Pqrty is in "" because I mean home "party*because it is not particular sociable food😂

To add I know you said mains but couldn't help it🙈

I don't like blue cheese especially, but in France I once had poached pears with melted roquefort and it was delicious.

I love the Bold Bean Company Queen Butter Beans, just warmed through with the stock that they come in, with maybe some mushrooms or broccoli or something stirred through and cheese crumbled over the top.

If I make a white sauce for lasagne, or whatever, I use blue cheese, much more flavoursome .
