Thanksgiving vegetarian dishes

I'm actually in charge if providing the side veg as the host says they'll do the main including vegetarian, but is there anything a bit more exciting than just green beans?

There's a whole cabbage from our veg box, so I might try roasting it in wedges.

I'm in the UK and have never been to a Thanksgiving dinner but I know mac and cheese is really popular so I'd be tempted to do a big tray of cauliflower cheese and maybe a tray of honey roasted carrots and parsnips.

Bread sauce
Brussel cheese or brocolli cheese (no Im not joking about the brussels, try it and see)
Red cabbage with spices, sugar, vinegar, sultanas and apple
A potato boulangere or dauphinoise
Tumbet/Ratatouille or briam type thing
creamed spinach

Mashed potatoes with some kind of vegetarian gravy on offer.

don’t do plain green beans, do green beans in a bechamel with a crunchy topping.

Waldorf salad

in my region, Thanksgiving = cream and lots of it.

Thank you all. Someone has already volunteered green bean casserole, so I shall be doing honey roast parsnips instead.
