Worked 47 hours last week - salaried job, insanely busy at mo. Got to do at least 6 hrs today. Partner not well.
Can you help me plan meals that are quick and healthy? I need to whizz to Tesco.
I bought ingredients for Salmon en Croute last week so I’ll do it tonight. I’ve made the watercress cream cheese base.
I have batch cooked bolognaise and bechemel in freezer so lasagna tomorrow.
Ive got frozen chilli for Tuesday
Can you inspire me for three more quick meals ?

I’d throw a nice soup into the mix and serve it with a part baked baguette and butter. Really good for the poorly partner too as you can pack it full of vitamins and immune boosting spices.
Butter bean based dishes are fab for nights when you can’t face cooking so I’d do a butter bean dish too.

Immune boosting soup
sweet potato
peppers
red onion
carrots
(if you want to make it even quicker, get frozen ready prepared versions of all the above)
Throw it all into a pan with enough chicken stock to cover the veg. Add spices/herbs of your choice (I normally add some turmeric and some mild chilli powder) and simmer until soft. Blend and serve with bread and butter. You can also add bacon or chorizo croutons if you want to make it a bit more fancy.

butter bean stew
sauce some garlic in a pan and add in some Italian seasoning and paprika. Pour in some stock and bring to a simmer. Stir in some cream cheese and the butter beans. Let it heat through and then serve with crusty bread.

I’d also buy a packet of wraps and do enchiladas with the leftover frozen chilli and bechemel sauce. Put some chilli into a wrap and fold. Add it to a roasting dish and repeat until you have enough. Pour your leftover bechemel over the top and add some grated cheese. Heat until the cheese melts
