Suggestion for a sheet of flaky pastry!

I was planning on making a cheese pie but don’t have the full ingredients. What can I make with this sheet of pastry?

I have potatoes, leeks, cheese, onions, cherry tomatoes. A kind of flan maybe?

any suggestions please?

A tart? I think I would saute the leeks and onion and parboil the potatoes, chopped smallish. Then place on pastry with tomatoes and lots of grated cheese. Eat hot or warm from oven.

I love making a tart with flakey pastry.
I prick a sheet of it with a fork, score round the edges and bake at 180 degrees (fan) for 20 minutes.

Then I put whatever topping I want on it and bake for another 15 to 20 minutes.

In this case I would slowly fry the leeks and onions in butter or oil and seasoning until golden and spread them on the cooked pastry, then cover with sliced tomatoes and sprinkle with oregano and seasoning and drizzle with olive oil then bake for 15 - 20 minutes.

Pre-cooking the pastry prevents a soggy bottom.
