Race across the world Dylan’s mum’s Christmas Icecream

Morning - was watching celeb Race across the world with dc last night and Dylan and his mum started talking about a Christmas ice cream she makes when they were looking at cinnamon sticks. She mentioned crushed ginger biscuits in it too…. We all agreed it sounded nice and I did some searching for a recipe through this little bit of info but no joy…. Anyone any similar recipes - it’s the crushed ginger biscuits that particularly appealed

My sister in law makes delicious Christmas ice cream - I don’t have the recipe but it is a standard ice cream base recipe (Carnation milk, cream etc) with mincemeat (she uses her boozy homemade one but pretty sure it would be good with shop bought) stirred in. If you chucked in some ginger biscuits as well it would be magnificent.

They all look yum… I’ve never thought of making a Christmas ice cream bomb before. I wonder if I can replace the mincemeat with crushed ginger biscuits 🤔
