Walnut and Banana cake

I have a great recipe for date, walnut and banana cake which I have adapted in the past to use other fruit I happened to have - mainly berries. DS (26) is visiting next week. He doesn't like dried fruit including dates and has asked me if I can make a walnut and banana cake.
I could experiment but just wondered whether anyone had a tried and tested recipe?

Are you happy to make a banana bread plus walnuts rather than a traditional cake? I use Maray Berry's recipe and add walnuts and choclate chips. It's lovely and foolproof.

Id go with either (frozen) blueberry or raspberry if you have to replace the dates. I m8ght add dark chocolate too. But if you're unsure just omit the dates? Should just result in a smaller cake.

@cromwell44 I do normally prefer a cake rather than a bread. Is that one nice and sticky?

@Seaside3 replacing the dates with raspberries is a good idea, especially as I have a freezer full!

I make banana and walnut cake as standard! I use a loaf tin as that seems sturdier, but I am very blase about how much banana and nuts go in each time, and it always comes out fine!

My top tip is to keep a handful of the walnuts and bash them into smaller chunks than the ones in the cake. Then sprinkle liberally over the top along with a generous pile of dark brown sugar.

@Defiantly41 that does look nicely sticky. I presume ordinary flour works as well.

@singthing One of my recipes has that extra sprinkle of nuts on top, it works really well.
They always say cake making has to be precise but actually I think you can play about with ingredients quite successfully.

I use Mary Berry carrot cake recipe, which has banana in and optional walnuts (which go very well with it). It's really easy and delicious, especially with cream cheese frosting

I only spotted this post today.

I've made this recipe before - but it's more of an occasion thing than an everyday cake as it's a bit faffy. It was delicious though :-)

Once the pictures load you should be able to see the recipe, and then my version - not quite as polished as the book version but still very edible!
