Easy veggie recipes for large groups

Does anyone have any easy recipes that are vegetarian and will be easy to make for large groups? I don't mind cooking but I get nervous about cooking for larger numbers, I'm just not used to it. I'd love to feel confident in inviting family/friends round for dinner more often. I need ideas that would comfortably feed up to say 10 people.

The other thing is pans, I'm not sure I have a pan big enough for example that could cook pasta for 10 or whatever! Any recommendations there would be well received too, budget options please.

Bean chilli with rice, salsa, cheese, sour cream etc

Veggie curry with rice, daal, breads and so on

Veg based soup (homecmade obv) with piles of fresh bread or cheese scones with salted butter then a pudding to add to the bulk if you think it's not a large enough meal!

Veg lasagne with garlic bread and salad

In terms of pans - what sort of size are your two biggest pots and pans? Or a slow cooker?

For 10 you would need 2 big roasting trays for this but it is super easy and tasty.
Assume your guests are as hungry as mine.
3 packs gnocci, 3 packs halloumi, 6-8 sweet peppers, fresh herbs, 2 large red onions
chop all of the above up, put in roasting tins, dribble with olive oil
roast in oven. ( um my ovens a bit shit so i do 200 for about 30 -40 mins, a newer oven might need less)
serve with green veg

Couple bit trays of Mac and cheese or veggie spag bol with veggies and garlic bread or a couple of pots of soup and bread and a a few cheese and cracker options

I would go for one of the following
Veg and chickpea curry served with rice, pakoras, nan.
Bean chilli with rice, wraps, salsa, guacamole, cheese.
Roast vegetable lasagne served with salad and garlic bread.
Spinach and ricotta canaloni with salad and bread.
Vegtable tagine with couscous and tenderstem broccoli

This is a great recipe and if you scroll down tells you about making it vegetarian. You can also alter the portions to calculate how much you need. You could do it in two pans and set the portion calculator to 5.

Personally I wouldn’t serve garlic bread with pasta.. for 10 i would do salmon fillets topped with mayo, lemon and herbs, a huge fattoush salad (easy) and microwave quinoa. Quick, easy and balanced.

Veggie chilli made ahead and cooked on hob, with rice cooked in the oven in a roasting dish. Grated cheese/sour cream/coriander/guacamole and whatever other toppings/sides can just be prepared in advance in side dishes

Veggie cottage pie or veggie lasagne, which you can make the day before. Just make two if you have a crowd.

Jacket potatoes can work well with various toppings and salad. Toppings could be veggie chilli, roast veg, grated cheese, baked beans, houmous, egg mayo etc. Just put it all out for people to serve themselves, maybe some crudites and dips to start off with too. The same principle could be applied to fajitas too.

Portobello Mushrooms (I generally just cook for a big longer in a frying pan and don't worry about the grilling)

All three work with rice for burrito bowls or you can do in wraps with guacamole, sour cream, salad etc in a Tex Mex theme. They've all gone down well with none veggies and are easy peasy to do.

If you do a pick and mix on this people can have what they like (and you don't have to worry so much about having a big pan). Again it looks like you've made a big effort but haven't really. Veggie chilli and the Black Beans freeze well so you can even cook well in advance and just reheat on the day and no one will know.

I've also done pulled aubergine before too which again isn't hard and the same principle works.

Other options I'd do. Sweet potato and lentil curry. Dead easy. Or a Thai green curry with green beans and chick peas.

Don't do lasagne for ten. It's a mega faff. I cook semi regularly for 20+ for various reasons. I tend to do meat options but have to do veggie/ vegan options too and these are my go tos for time and effort.
