Vegetarian lasagne recipe

I'm off for a long weekend next week with 12 friends (plus 5 kids), half are vegetarian. Its a self catering cottage, so we all pitch in with food prep for all meals.

I'm going to premake two lasagne (one meat, one veggie) to take because everyone knows second/third day lasagne ia best (and saves me having to do something in an unknown kitchen!)

I dont want to make a vegetarian lasagne thats just roast peppers and courgettes, which Google suggests a lot.

If anyone has a good reliable vegetarian lasagne recipe, either using lentils and mushrooms or veggie mince, please help me out!

Ps on that dinner night, there's going to be sides and other pasta dishes, this is just my contribution!

I make it exactly like a meat one but with lentils, if your making two it makes it so much easier. I do a mix of green and red lentils to vary the texture a bit.

This shepherds pie filling is ace! I've done it as Lasagne and added things like peppers and mushrooms (in thatcasegrate the carrots. Bonus: best eaten next day or the day after!

The one in the cranks recipe book is amazing. I can’t find the recipe but put butternut squash in it makes all the difference.

Oh wow amazing! I thought my "up with a baby" 4am posting would mean this thread was a non starter, but seems a few of us were on the night shift!

@Mamadoes I think my previous vegetable attempts have been watery and so bit flavourless, but let's blame the chef rather than the ingredients for that one.

@DancefloorAcrobatics love that veggie shepherds pie recipe, one of my autumn go-tos!

I make two fillings alternating. The tomato based filling is peppers, courgettes, toasted aubergine with basil then I make a mushroom, spinach and ricotta filling with chopped parsley, I do a layer of tomato, pasta, layer of ricotta, pasta, tomato, pasta, ricotta, pasta then a cheese (provolone) bechemel With mozzarella, fresh parsley and grated provolone on top. I’ve also used blue cheese or goats cheese but only if your guests are fans

The mob one pot mushroom lasagne is the nicest veggie lasagne I’ve ever made. You have to sign up for a week to get it, but it’s free for 7 days. Well worth it!!!
it’s really easy to make and a firm favourite in our house, with veggies and meat eaters alike.

My hack is to use the bags of frozen roast veg! Then just the usual suspects - tinned toms, stock, herbs etc. I usually add tinned lentils to bulk out but it’s good without!

Update: I made two veggie lasagna.

One had the shepherds pie filling (so green and black lentils with mushrooms and carrots) and instead of white sauce it was ricotta, mozzarella and veggie parmesan).

The second was Mary Berry's roasted veg lasagne with carrots, celery and more peppers.

Both went down super well, probably better than my husband's carnivore option.
