I want to make a chicken curry with tomatoes and spinach

I fancy making a chicken curry tonight and I’d like it to have tomatoes and spinach in it. Can’t be hot or too spicy as the fam won’t be keen. It can be more exciting than a korma though 😆. Can anyone recommend a recipe that is reasonably quick and easy, not too hot or spicy but not mild and creamy either? Thanks!

I do one with tomato and spinach but I literally make it up as I go along, I put in turmeric, cumin, ground coriander, garam masala, curry paste, garlic and ginger. I usually put coconut milk in at the end

Lots of onions garlic and ginger. Fry til soft, add the tomatoes and chicken. Lastly add the spinach, if the kids don’t like it wilted, whizz it up. Add any curry flavourings you fancy along the way, a little at a time to suit your tastes.

There was a review of curry kits in guardian food section at the weekend - good quick fix if you're not sure about ingredients and how to layer?

It won't be creamy unless you add cream, coconut milk or blended nuts.

Marinade the meat in spices and yoghurt for tenderness, even if only for 20 mins. Chicken thighs work brilliantly for curry

Look up Mowgli mother butter chicken and just add spinach. Quite tomatoey and not too spicy if you use mild chilli powder. I made it at the weekend. I didn’t add spinach as I made lentil and spinach dhal from the same book. Both very nice!

Thesre are loads of chicken saag recipes on the Internet. Before I was ill it was a regular Saturday night dinner. Just bear in mind that spinach absorbs the curry flavour so there may be more spice than you'd think necessary.

Wilt and squeeze your spinach first, it can make the sauce watery otherwise.

look up the Hairy Dieters (as in the Hairy Bikers) lamb, spinach and potato curry and just use chicken instead of lamb

The pots of curry powder usually have a recipe on them. The Sainsburys medium curry powder uses tinned tomatoes in them, and you can add spinach towards the end

I know it’s a bit late now but we like Gousto’s fragrant chicken saag masala.

We sometimes cook it for family or friends and so far, everyone has enjoyed it. Just use around half of the chilli they recommend Smile

I was pressed for time so I bought a Spice Tailor kit and added spinach and some extra bits, it was very nice.
