I’m looking for a fool proof fudge recipe, preferably one that has a crumbly texture rather than a squidgy ganache. I’m going for a traditional vanilla fudge, and then maybe experiment.
it doesn’t have to be slow cooker, but simple would be good. I made it once before, years ago and the sugar didn’t melt properly.
I’d like to redeem myself!

But that's a saucepan recipe, not slow cooker. Slow cooker fudge doesn't get hot enough to make crumbly fudge (IMO), it's basically just melting stuff together. I make white chocolate fudge in the slow cooker, but it's pretty chewy, and for the crumbly stuff you have to boil the sugar, so it's a pan.

Fudge is slightly fudgier than tablet tho.

If you want crumblier you need a pan to get it hot enough, though if I were me I’d just make tablet. If you do go the tablet route, add in a couple of squares of white chocolate at the beating stage. Makes it just that bit creamier tasting and helps it to set.
