Interesting Christmas Dinner Sides

I'm going to a family Christmas dinner but as there's 25 of us we are doing a buffet style spread.

I'm always asked to bring a few "unusual" side dishes as my family are more traditional but like to try new things. Previosuly, I've brought things like carrot parsnip marscapone gratin, nduja sprouts, whipped feta, jalapeño cornbread

Does anyone have any suggestions for me for this year?

Bacon fried sprouts
Hasselback potatoes
Cheesy bacon potato skins
Bacon wrapped stuffing balls
Crunchy roasted parsnips
Potato wedges
Cucumber and dill and yoghurt salad
Red cabbage slaw
Grilled veggie/halloumi kebabs

Shredded sprouts sauted in butter with bacon/ pancetta, cream and nutmeg and some water to loosen it up. I don't like sprouts but think these are delicious.

You could also look to the US and try one of their bonkers Thanksgiving sides - marshmallows anyone!

-Where I can, I try to eat what is in season as its often freshest and and cheaper. I have included an asparagus recipe, but I think the rest of my list would be in season in Dec (IF you are in the UK?)

-This one can be controversial! Brussels fried in a pan with marmite and butter. Fairly low heat to ensure they are tender but not mush. It produces a lovely umami flavour, but I appreciate not everyone loves it like me 😋
