Special dessert / cake needed

Hi there
I am looking for recommendations for a special cake that can be made ahead and lasts a few days. I was thinking of doing an apricot frangipane cake but would welcome any other suggestions (but no chocolate). Anything with marzipan is a bonus too!

The Donna Hay one bowl chocolate cake is really great for this. It actually gets more dense and fudgy over a few days.

What about a Swedish Princess cake? It's very pretty to look at! I'll admit that all I know is it's covered in green marzipan, I'm not actually sure what's in it but no chocolate, certainly.

Ruth Levy Berenbaum's Cake Bible is very good for this kind of thing.

Russian Honey Cake. A bit of a faff to make, but it has to be made at least a day in advance and it lasts a good 3-4 days. It's an amazing fresh dessert served with fresh berries, and the multilayers make it a real showstopper.

No frangipane I'm afraid, but still highly recommended
