What will you be baking this Christmas. I’m looking for ideas. Recipes too if you have them please.

So far I’ve baked my Christmas cake - Delia Smith’s Classic Christmas cake, and today have made a first batch of mince pies, already in the freezer. Didn’t need a recipe - just made a batch of shortcrust pastry and filled with mincemeat.

I’ll also be making some mini Bakewell Tarts (got the recipe years ago from Tesco’s website) and probably some vegetarian sausage rolls - recipe for those us in Delia’s Christmas book.

I shall be making stollen (Richard Bertinet recipe, I’ve tried many over the years and this is my favourite).

Ifancy a Xmas cake too but it’ll be a small one as only DH and I eat it. Possibly Nigel slater this year as I haven’t made his before.

And a batch of mince pies but Delia mincemeat left over from last year.

I alwaysake cup cakes and spend a long time icing them with Xmas theme. I make chocolate Krispy cakes but only Xmas thing is the baking case they are put in. I pay a lady to make me a bouquet of poinsetia cakes. She is very skilled and mine never look.halg as good.

I’ll be doing Delia’s cake too bit with much more brandy, some frangipan mince pies and ginger bread with the kids. I’m also making sticky ginger puddings for dessert on Christmas Day, the puddings can be frozen and then warmed and topped with a ginger toffee sauce on the day - double the sauce for ice cream and pancakes over the holiday season. I love Christmas baking.

Im not a fan of usual Christmas baking as its all a bit much. I do usually make all the non Xmas type desserts which are different every year.

Raspberry and lime curd pavlova
Caprese cake (chocolate torte)
Tarte au Citroen
Pear frangipan tart
Mixed berry Clefutis (delicious baked almond custard cake thing)
Large Creme caramel

That’s a given! As well as feeding the cake regularly, I always double the amount of brandy that I soak the dried fruit in.

I will also be baking a sticky toffee pudding, which we have on Christmas Day - always requested by the DC and DH. Simon Hopkinson’s recipe is absolutely to die for.

I think we’re from the same baking stable @BIWIthat’s the recipe I use for the ginger pudding - replace half the dates with stem ginger, add some dried ginger and cinnamon. Then use the stem ginger syrup in the toffee sauce with a splash of whisky.
