What would you make for a meeting the boyfriend dinner?

Meeting dds new partner on Saturday, wondering what I fancy making for a meal for us all.
Needs to be dairy free and veggie, to suit all of us.
Thinking possibly some kind of quiche, but haven't made one for ages.

Quiche would be lovely. You could do a few nice sides. Salads. Crusty bread. Garlic potatoes

How exciting! Does he have a preference for what he likes to eat? I would ask that first and see what I could do based off of that. I would do quiche for a lunch but not for dinner, dinner feels like it needs to be a bit more substantial to me? If that makes sense? Is he ok with mild spice? If he is - this is REALLY lovely: https://hurrythefoodup.com/vegan-chickpea-curry-ready/ and I'd get some paratha bread that you just have to flip over twice in the frying pan (no oil) and they are done. Would have to be vegan pesto as traditionally pesto has pecorino or parmesan cheese in it.

Tortilla with red onion, mushroom, feta cheese and roasted red peppers (the ones you can buy in a jar as they’re skinned already) in is lovely with crusty bread and salad.
beetroot and goats cheese salad with red onion, radish, walnuts if no nut allergies and spinach and celery is delicious with a vinaigrette.
Cooked cooked pasta like penne or fusilli, red & yellow vine tomatoes, red onion, butterbean and halloumi cheese that’s been grilled/ roasted and cubed mixed together then tossed with a pesto olive oil type dressing is also really good
or grated courgette and carrot with a fresh basil and lemon vinaigrette with crumbled feta cheese and toasted pine nuts with toasted pitta bread

Quiche feels a bit summery or lunch like for me. I’d go for a veggie chilli or bolognese or something. But if I wanted to be more adventurous I’d dust off my Persiana cook book and do a few dishes, as lots of veggie options in there.

Honestly, it is SO good. And if DD makes great parathas then it kind of seals the deal really doesn't it?! Trust me, you won't regret it. It's a really good family meal and every time I have made it and hoped there would be some leftovers for my lunch the next day... never happens!

toasted chick peas in Moroccan spices with pickled red onions and sliced lemons
hummus
roasted sweet potato wedges
a pomegranate based salad type thing with spinach, chopped up roasted sun-dried tomatoes and mint

I think they meant because pesto isn't vegetarian (contains rennet) rather than not dairy free. But if you're making one with no cheese then both problems solved!

Tagine is lovely. I would do sides of giant couscous, houmous, flat breads. Loads of pomegranate seeds and parsley on the couscous, makes it look and taste amazing.
