…dry or wet?

I am Team Dry. Crispy bits of potato, onion and corned beef fried together with two runny eggs on top and a big squeeze of brown sauce.

DH is Team Wet. Like a not very nice version of stovies/scouse with corned beef, very soft potatoes, onions and sort of gravy holding it together. He does at least agree with me on the brown sauce.

Your version! Your DH’s sounds like a different beast altogether. I’d eat it but probably not describe it as corned beef hash.

I had never had it as a child and someone mentioned it to me saying their kids liked it, but I thought it was called corned beef mash .I made potatoes, carrots,onion butter and milk put chopped corned beef chopped into it and mashed it all together and served with gravy. My kids did really like it. We only found out a long time later that we had got it wrong, but we continued to make it our way😂

I think this could be regional, my family's version a more like a beef stew but with corned beef instead of beef. We also add dumplings

My granny used to make it wet and serve with baked beans. The thought of that still makes me gag.

I don't think there's a 'right' way tbh.
My version is corned beef mashed into mash. Then baked until crispy. Served with baked beans.

Your DH's version is what I grew up with and I still enjoy it. Great comfort food, especially if I'm under the weather, or it's cold and wet outside. Think of my Grandma every time I make it! I put corned beef, potatoes, carrots and onions in mine.

Having said that I also enjoy a drier version with a fried egg on top like you do.

They are two completely different meals and really need different names!

You can both keep your brown sauce though!Grin

Same here. I was well into adulthood before I learned there was a different version.

It was on a pub menu and included a fried egg which would be utterly weird on top of stew but I can see how it would go quite well with dry potatoes, onions and corned beef.

If I was having it on it’s own I’d have it wet BUT if you haven’t tried the drier version in a pie, served with lashing of gravy, you haven’t lived.

I do baked beans, corned beef, mash, cheese 🧀 crispy top.

stovies I do depending on what we have with sausage or lamb or corned beef. More sloppy, no crispy top

Fried egg? I have never in my life had a fried egg on corned beef hash. Its corned beef, mixed with baked beans and chopped onions, with mashed potato on top, then baked in the oven. Delicious and obviously the right way to do it 😀

It’s always amazed me how one meal can be cooked so differently! The way I make it - and how my mum used to make it - is corned beef and crispy onions mixed into cheesy mash in an oven dish. Extra sprinkling of cheese on top and under the grill to crisp up. Served with a fried egg on top and baked beans on the side.

I haven't had hash in years, I only ever had it wet. As that is how my mother made it. I loved it , but dry sounds good too.

Wet every time..we call it panackalty here in SW Durham. Spuds, corned beef, diced carrots, beef stock ans a handful of barley. Served with git, big wedges of buttered stottie 😋

Dry - I do the Delia recipe which has crispy edged potatoes and onions. I love it and wouldn't dream of eating corned beef usually.

You need another option which is the best corned beef hash is in someone else’s house. DH and DS2 love it (wet), DS1 and I are 🤮🤮 it stinks I can’t imagine it tastes great.

(Mind you he has dripping in the fridge at the moment and I’m having a smoothie with flax and chia seeds for breakfast so that probably tells you all you need to know about dietary choices in our house)

Bit of both! I make the hash with onions, mushroom, jar of baby carrots and peas use the water in it for flavour then add Worcestershire sauce and allow to break down. Then separately make mini crispy potatoes and then serve with a fried egg on top!

oh dear. Our corned beef hash is nothing like this (wet or dry!).
My mum laid out slices of corned beef in a pie dish (like a pastry base), topped with baked beans and then mashed potatoes and onions.
Oven for 35-40 minutes and then a few minutes under the grill.
Slice it up like lasagna.
I need to investigate alternative versions!
