We have this often and know it is a very fatty cut.

However the pack we have just opened is just pure fat with a tiny ribbon of pork! How to salvage to still enjoy tips please?

If the meat strip is on the bottom, not much you can do. If in between skin and fat trip the fat at the bottom. Otherwise cook it as it is. Preferably roast then you can be trimming the fat as you eat/serve.

That’s a bit rubbish. I do like pork belly but try to get it from a butcher herself if I can as I’ve had similar experiences when I’ve bought it at supermarkets.
