Looking for inspiration for a easy ish, not too expensive sat night meal for x4. Meat eaters and no special dietary requirements. Apart from a fussy 8 year old. Have totally run out of ideas after 30+ years of cooking 🤣

Nachos, fajitas? We tend to make all the bits and bobs then stick it all on the table so everyone can 'customise' theirs.
Dh did egg fried rice and salt & garlic chicken last night which was lush (though he said frying the chicken was a bit of a faff). Seasoning stuff bought from local Asian supermarket.

We had this with braised red cabbage, cooked with orange juice, brown sugar and a splash of cider vinegar. Also added the juice of half an orange squeezed over the duck. The potatoes roast in the duck fat and the duck gets nice & crispy, it was delicious!

Too late now but we were supposed to be having Tandoori chicken burgers with masala fries but the salad had gone funny so swapped to sticky chicken, rice and veg in a gochujang and coconut broth and will have the burgers on Monday. It was delicious 😋.

It's such a pain being an adult and having to think of what to cook for dinner every night LOL. My slow cooker saves me time and brain power. I cook lamb and chicken casseroles, spag bol, and veg soups in it.

Quick, easy and cheap ideas:
Garlic bread baguette (chilled one) baked for a few minutes, then cut lengthways, not all the way through. Stuff with meatballs in any type of tomato based sauce, cover with grated mozzarella and cheddar cheese then bake until crispy and browned. Allow half per person served with salad.

Corned beef and rice: tin of corned beef, large fried chopped onion, tin of chopped tomatoes, large dash of tomato puree (can also add peppers etc etc,) Add all to a frying pan and then serve with rice.

Pulled pork tacos
Cook a pork joint, cool and shred then mix with a jar of bbq sauce and add to tacos, cover with cheese and serve with potato wedges and salad.
