Recipe for Chicken Pie

I have never cooked a pie before. For some reason my DP has asked me to bake a chicken and vegetable pie in gravy for his birthday. It must be shortcrust pastry and a proper pie rather than just a pastry lid. He doesn’t ask for much so I would like to try and make this for him. I’ve been searching the web and a combination of cold and fatigue and frustration has led to a fruitless search for a good recipe. I am turning to wise mumsnetters and seeking any tried and tested recipes you might be willing to share?

It's not shortcrust pastry - though you could easily switch to that I do think this pastry is lovely, buttery and crunchy - this ultimate chicken pie is wonderful

I make chicken and leek pie with left over chicken.

I use the be-ro shortcrust pastry recipe and blind bake the base.

For the filling, I fry a leek in garlic butter while I make up some chicken gravy granuals in a jug. Add the gravy to the leeks along with the cooked chicken and a tablespoon or so of sage and onion stuffing mix. Keep on the hob until it’s warmed through.

Add the filling to the blind baked base and then put the top on. Into the oven for 30-45 minutes depending on how crunchy you like your pastry.

We dis this as a hot sandwich filling for an event a while back and it went down better than the Swedish meatballs in tomato sauce!

Make sure you buy an enamel falcon pie dish if you're going to do proper pie with a base. It won't cook in a ceramic one

I make this Jamie Oliver one, chicken and leek pie, in a ceramic dish and it cooks fine for me. I use prerolled shortcrust for the base and prerolled puff for the top. Another thing I like to do is season the pastry top after egg washing with a small sprinkle of salt, pepper and some dried herbs. It really makes it a bit more special.
