'Sandwiches for dinner'

Is anyone up for contributing to a thread about 'sandwiches' for evening meal/dinner?

Am not meaning 'can't be bothered with cooking so I'll have a tuna mayo sandwich' but more food which is essentially a take on a 'sandwich' but is hearty enough to have for evening meal.

We - which is just Dh and I as DD is old enough to have moved out - are quite partial to an occassional sandwich dinner (obviously this may not be suitable for those who are feeding multiples...!)

On our current list of foods that fall into the 'sandwiches for dinner' category are:

Báhn mi - with pork belly, often adapt Ottolenghi's recipe

Torta - mexican sandwich - I use Thomasina Miers take

Nigella's garlic portobelloe mushroom on ciabatta

Olia Hercules cotoletta

Am wanting to make a Portuguese bifana (send suggestions please!)

Will make arayes this week I think - have some recipes but again do share any gems.

Never made arepas but up for that too!

What 'sandwiches' am i missing out on (have not included quesadillas as I think of them as a lunch rather than dinner..no logic I know..)

I quite often do a roast chicken with crusty bread/baguette and salad for dinner. Hot roast chicken and mayo in bread is amazing.
Ditto roast lamb with pitta and chilli or mint sauce.

Burgers obvs - home made beef, or chicken.

Oh we love a sandwich in this house.

Sirloin steak french dip sandwiches with onion chutney and an unholy amount of gravy are peak.

Philly cheesesteak. Needs no further info, as long as it's greasy enough to shoot out of your hands like a bar of soap it's good.

Toasted Ciabatta with olive oil, mozzarella, pesto, mortadella and crushed pistachios.

My latest obsession is honey gochujang chicken with Kewpie mayo and pickled carrot in a bun, it's to die for.

Steak sandwich or burger (same thing).

Garlic naan with chicken tikka cubes inside and garlic yogurt.

Shwarma.

Tacos and quesadillas.

Steamed buns, belly pork ideally

calzone.

@SpiceGhoul do you have a bifana recipe to share - I have seen many online and get the basics but any tips welcome!
@OvernightBloats thank you for reminding me of muffaleta - I have made the Peter Gordon one in Nigel Slater's Real Food - must go and have another look!

@myrtleWilson I'm afraid I just used the top Google result but I used pork loin steaks that I'd flattened so I can't say how authentic it is sorry and I use a homemade peri peri sauce from a local restaurant so again not very helpful.

Inspired by this thread I think I’m going to work sandwiches into the meal plan once a week! Next week is Diwali so I thought I’d start with dabeli, an Indian street food sandwich.
