no olive oil - is butter ok? or sunflower oil?

stirlingmum · 04/06/2008 18:31

Butter on its own would burn - use sunflower oil instead.

PS if it all goes wrong, just smush it about a lot with the spatula so it goes a bit scrambly and call it 'eggy mess' - tastes nice still (not that that's what I do everytime I try to make an omelette )

Don't use mushrooms. Or ham for that matter? Keep it simple. Egg, onion, potato. It shouldn't be a riot of flavours, more of a comforting wedge.

Brainache · 04/06/2008 22:05

Yum Yum Yum it was lovely Used ham mushroom onion potato green beans - wont use green beans again but was very lovely.
Must buy a bigger frying pan though, didnt reolise how small it was really till today hehe

I made first one on a whim recently and it came out well.

Sauteed onions, sweet peppers, mushrooms, courgettes in a bit of oil (use non stick pan) while diced potatoes were boiling. Added cooled potatoes to vegetables and tossed them to soak up flavours. Added lightly beaten eggs (4) and cooked on low to medium heat for about 20 mins. Added some grated cheese over the top and grilled for a few minutes to get golden brown colour. Delish!

Use whatever veg you fancy. I served wedges with rocket leaves with balsamic vinegar dressing.

I made my first one last week (ham, spinach, yellow pepper) and it turned out so well that I'm experimenting tonight with smoked salmon and asparagus.
