Which brand of firm tofu do you use? I’ve tried a couple and they’re too soft. Is there an easily found really firm commercial brand or do I have to press it myself? (Which I suspect I’m not going to do!)

I press it between two plates for half an hour or so before using which firms it up. How do you cook it?

I used Cauldron in the UK as my preferred one. Are you freezing it then defrosting it to firm it up a bit more? It used to be recommended in all vegan cookbooks.

I use Tofoo, mainly the naked and smoked varieties. I did find a Tofoo stir fry a few weeks ago but I can't remember which supermarket I found it in.

I’ve tried every tofu under the sun and my favourite is aldis own brand! They do plain, smoked and chilli marinated. The smoked is my favourite.

I like the Sainsburys organic firm tofu
I don't press it but if I am cooking with tofu I always take it out of the water in the packaging for a few hours before i cook it so it dries out a bit

I also use Cauldron and freeze it.

op I think you have to press it all to get the liquid out. There isn’t one I’ve bought that doesn’t need pressing.

Thank you! I’ve tried stir frys and crisping it in the air fryer and it’s OK but never as good as it is ib restaurants. I suppose I can cope with putting ut between two plates…..Never tried freezing it/I’ll try that too.
I’ve got an Ottolenghi recipe I really want to try.

Lidl do identical ones. They also have a basil flavoured one. They are so good!
