Filling for coffee or coffee and walnut sandwich cake

In a Victoria sponge sandwich I like raspberry jam with cream or buttercream (sorry everyone, I think it should be strawberry jam only?)

I miss the jam equivalent in a coffee cake to complement the coffee buttercream. Any suggestions? I was thinking maybe an espresso syrup/glaze thing? Any shop-bought or quickly home made suggestions gratefully received!

Chocolate works well with coffee, so maybe a Nutella type of filling?

Sounds weird, but fig jam also works well with coffee.

I caramel walnuts and pop them on top of the coffee buttercream.

There is a nice Mary berry recipe for hazelnut praline with coffee cake.

I can't think of a jam-like product for you that's coffee flavoured. Perhaps a salted caramel sauce? Sainsburys do a nice one in a jar. Maybe mix some camp coffee into that?

I like PP's suggestion of chocolate. How about a layer of a dark chocolate ganache, kept quite bitter, and a layer of coffee buttercream?

Thanks everyone, will do a bit of experimenting

Apricot jam and coffee buttercream made with camps coffee essence

Dark chocolate or chocolate & caramel ganache? Depends how sweet your buttercream is, traditional Victoria sandwich would have whipped cream plus the jam, with buttercream you may not need any extra sweetness.

or coffee/Kahlua liqueur syrup?

I’d do apricot jam , with a cream cheese coffee butter cream

I use a cannoli filling - ricotta, dash of vanilla, icing sugar, mini chocolate chips.

For a walnut and coffee cake, maybe add some finely chopped walnuts to the ricotta mix.

Mascarpone buttercream is good too. I like the idea of chocolate chips.

Pecans are good instead of walnuts too.

Lotus biscuit spread, or the Lidl equivalent, either on its own or beaten with the buttercream.

These all sound fab. Won’t be able to move once I’ve tried them!
