What do I do with green lentils!!! (YUCK - was trying to be healthy!)

So I bought them and they are languishing at the back of the larder - what the feck do I do with them?

Have thought of making some door stops and using them for filling but that sort of defeats the point!

Fry chopped onions and garlic gently with some spices eg a bit of cumin and turmeric. Wash lentils and add. Stir in tin of chopped tomatoes and some tomato puree, and about a cup of water or wine, and stock powder. Cook over low heat for 20-30 mins, lentils will soften, add more water if necessary to get stew-like consistency. You can also add things like sliced mushrooms, peppers and courgettes at the onion stage. Good simple meal on its own or really nice with white fish.

I had them last night!

I fried an onion, garlic and small amount of pancetta together than added the lentils, cooked for 5 mins or so then added a handful of frozen peas and stirred through a tiny amount of chicken stock concentrate (I use the M&S in a jar one)

I grilled a chicken breast then served the chicken breast on top of the lentils with loads of green veg.

It was delicious!

I think you do need a bit of pancetta or some spices to flavour the lentils as they can be a bit dull otherwise!

You can also serve them cold with a vinegarette dressing - with cold poached salmon on top!

This is absolutely gorgeous. Egg and lentil curry with coconut and pickled lime. A doddle to make, cheap, mostly store cupboard stuff. Yum. Family favourite here. We're having it tonight.

Right am off to get some bits from the deli as I can't walk that far with the bad back - oh woe is me!!!

Not sure I can cope with eggs and lentils all in one go though - DH could rent himself out to fill up balloons if I did that! PARP!!

Make a good chilli. Add to just about any stew or soup.

Here's dd1's lentil recipe.

Fry 2 medium onions, chopped, and 2 crushed cloves of garlic, in some oil. To the pan add 2 teaspoons ground cumin, 1/4-1/2 chilli flakes, 1-2 tsp curry powder/paste and two cardamon pods. (Adjust spices to your requirement)

Add a tin of tomatoes to the pan and 500mls of stock or water. Add 300g of washed lentils. Bring to boil and simmer until lentils are soft. Add more liquid if it seems to be too dry.

Other chopped veg can be added, if desired. Serve with rice or naan bread.

Heat up som olive oil. Brown some garlic and a chopped onion and a chopped green chilli. Add lentils, stir a bit, add some stock and simmer til cooked. Serve with grilled sausages. Fight off my children - including ultra conservative "what's-that-mum-meat-and-two-veg' ds

Right lentils will be used to make parp enducing dinner tommorrow night - how exciting in 33 years I have never cooked a lentil - well other than bunging a handful with some other pulses into a stew!

Am sure DH will ask me what the feck it is and then proceed to parp all night but lets see!
