I made sugar-free caramel sauce, and it actually worked.

I try to eat low-gi, low-carb, sugar-free because I have type 2 diabetes that has become increasingly difficult to control over the years. So I keep an eye on keto cooking channels on YouTube. On the whole I would rather not eat some things at all than eat the keto version because some of them are really horrible. Particularly trying to make biscuits, I've just given up now because almond flour doesn't make anything close to what I recognise as a biscuit no matter how much the lying YouTube people say "mmm, tastes just like X, I can't tell the difference".

So I wasn't holding out much hope for the caramel sauce, but it really does taste good. It's not low calorie because it has butter and cream, and I can't eat a lot of it because allulose can cause stomach upsets in large amounts, but even DH thinks it tastes good. I used this recipe, but there are a few out there.
