I'm planning to make the one pan sage and onion chicken and sausage from Nigella's Feast. She suggests serving it with potato gratin and peas. Not keen on peas so what else could I accompany it with please? Also, I'm catering for two veggies, neither of them like fake meat that much. Any ideas for something that will go alongside? Probably doing something chocolatey for pud.

Im a big fan of fine french beans, get them frozen and have them while they're still squeaky.

What about roasted cauliflower with paneer for the veggies, you could use sagey herby type flavours for that which would complement the meat dish and meat eaters could have a bit too. Or someting very different so its a contrast

The old standby Ottelenghi's tandoori chickpeas, addictive and completely effortless. Wont particularly go with sage and onion chicken though.

Baked feta on a bed of roasted veg and potatoes? Roast the potatoes in oil at the base, add the veg a bit later, then around 15 mins to serve plonk on a whole feta, or 2 of them and it bakes, melty, oozy.

Anyway, french beans would go with the lot of that

For the veggies create a similar dish replacing the chicken and sausages with butternut squash, apples and parsnips and crumble over blue cheese for the last ten minutes in the oven. I’d serve with broccoli and green beans.

Brilliant suggestions above! I also came on to say frozen green beans - I serve them with everything...sometimes I add a bit of lemon zest and some flaked almonds, or a bit of herb butter.

Broccoli and leeks? Roast peppers? Courgetti fried in butter? Roast kale?
Bit boring but not a fan myself of squeaky green beans or squash.
Then the veggies could have the broccoli and leeks with a blue cheese sauce as their main dish along with the other veggies maybe?
Looked up that Nigella recipe and it looks amazing.

Or, an actual savoury crumble, with sage in the crumble topping. What about Lancashire or Caerphilly with sage and herbs or actual sage derby cheese in the crumble topping

Getting myself excited here.

i wouldn’t do cheese for the veggies if you’re serving dauphinoise potatoes, it could all be too creamy. A lentil bake or nut roast type thing maybe to fit with the autumn sort of vibe?

Agree on reflection @MiddleAgedDread . It could get too cheesy. ( Is there such a thing though?)
