I'm doing roast chicken this weekend. It normally does a roast for 4, then a chicken curry the next day and I boil the carcass for soup. Any idea how I can make this go further?

Instead of using all the remaining chicken in the curry, add chickpeas and lentils instead and make a risotto with the remaining meat and half the stock from the carcass

I don't think you can stretch a chicken for four any further than you are doing already.

We have a medium one for three today. Tomorrow I'll make chicken curry. They will not be six big portions and the carcass will go straight in the bin.

I recall a poster years ago saying they only used meat to add flavour. As bonkers now as it was then.

Put less in those meals, substitute some chick peas or whatever then make something else with the remainder.

But what you've described is fairly normal. Instead of having loads of meals with a very small amount of chicken, how about having those 3 meals and then make something else, if you're trying to reduce the amount of meat you eat, something vegetarian like a bean chilli or chick pea curry?

The 'hilarious' mumsnet chicken comments are mostly exaggerated for tedious comic effect and in any case making more than one meal from a chicken predates Mumsnet by decades, if not centuries.

I'm about to shred the remainder of the meat from my roast chicken and use it for homemade pizza topping (with some other bits and bobs too). It's done 2 meals so the little bit left will be perfect for pizza. I can't be arsed to make stock or soup with the carcass this time, so it'll go in the bin
