Butternut squash soup, what's your favourite recipe?

I've never made it before but got a BNS in my veg box and think I'll make one on Sunday. What's your favourite tried and tested version?

Split in half. Remove pips. Sprinkle generously with chilli flakes and olive oil. Roast until really done. Sauté an onion. Peel a potato and add. Scoop out innards of roasted squash. Add vegetable stock. Boil. Whizz. Eat.

This is my usual too. I use cumin, cayenne, maybe a bit of turmeric

Or I do a Thai variation - add a bit of red curry paste, fish sauce and coconut milk before blitzing. 😋

Not a specific recipe but
Butternut squash, coconut milk, chilli, lime. Plus some warming spices like ginger. Garlic.

So kind of Thai flavours.

This is known as the best soup in the world in our house, it’s really amazing. I’m making some tomorrow to take to DD at uni.

I love that you don’t have to chop any bloody onions 😅

Thank you all! I think I may combine them all! They all sound delicious.
I'm thinking roasted BNS, carrots, onion, lentils chillis, spices and coconut milk blended up with lots of fresh coriander added after blending 😋. Considering bulking it out with a tin of tomatoes as I'd like it to last a good few lunches but not sure if it'll ruin it 🤔.

Roast in oven, meanwhile sauté onion, celery and carrot as finely chopped as you can, add garlic, then the roasted butternut squash and sprigs of thyme, add vegetable stock, bay leaf, pinch of chilli flakes cook 10 minutes, remove thyme and bay then blend, add salt and pepper to taste plus a little honey

That is the most delicious, it's true but I can never be bothered to wait for the squash to roast first.

I fry spring onions with smoky paprika, smoked chilli flakes, garlic, add the squash with a small splash of pumpkin oil or if you don't have that, sesame oil, red peppers optional, then add stock and half a mug of washed red lentils to thicken it. Cook until soft then blitz. Just before serving, a little squeeze of fresh lemon or lime juice, some chopped chives and a swirl of single cream.

Yum. I am going to do this soup. I have done similar with sweet potato and red onions roasted with cumin.

That's amused me this morning!! That there is a dodgy soup recipe requiring review.

I only ever make lentil, butternut squash soup (with carrots, sweet potato, peppers - depending on what i have)..

I love the sound of Thai curry bns soup.

-- am I the only one that buys the bags or ready cut up squash and use this as a quick meal?

I am shocked & amused it was just a link to the recipe posted on a blog , nothing sinister, but it was instantly hidden as soon as I posted so I don't know what triggered it 🤷 I won't bother posting links again.

I don’t think you’ll regret it!

I made it this morning and for various oven related annoyances I roasted the veg for longer than usual - tastes even better, you can really taste the toastiness. So my top tip is to keep roasting until there’s a nice amount of caramelisation.
