Dorset apple cake recipe

Found a tray bake recipe on Good Food but then I discovered I no longer seem to possess a suitable tin. Loads of cake tins and just wondering if anyone has a really good recipe they wouldn't mind passing on. Quite like a moist cake and maybe added cinamon or other spices to include with the apples. Thanks.

I make this a lot and get asked for the recipe, it is so easy.
I have it as a slice of cake, my neighbour who asked for the recipe makes it as a
Pudding and serves it with custard

If I were you, I’d go out and get a new tin. Because that Good Food recipe is excellent. It gets rave reviews whenever I make it.

I make the Dorset apple tray bake regularly at this time of the year. This weekend I just used a deep 20cm square tin - I just set the oven lower and cooked for longer. I pull it out the oven when the internal temp hits 93c - always cooked perfectly. I also add in 2 tsp mixed spice and a tsp of ginger (or sometimes cinnamon).

I made the good food one above for the first time this weekend. Added.a handful of crushed walnuts as no sultanas. Also added cinnamon and put a dash of rose water on the apples. Finally, added a grind of timut pepper, which has a slight citrussy flavour. Sounds weird, but it turned out delicious.

I made this one this week and it is delicious! I didn't have sultanas so used some mixed fruit which I think worked well, and I made it gluten free which also worked well. It helps that the butter was rubbed into the flour, which in my early discovering of gluten free baking is the best method for not dry moist cakes.

My next one to try is a Waitrose recipe which came up on Facebook. Has anyone made it?

I currently have an Dorset Apple traybake in the oven. People keep giving me their windfalls!

Recipe is from Good Food. I’ll let you know how it turns out.

Sorry! I just reread your op and it’s probably the one you tried because I was also flummoxed by the tin size! I used a Pyrex dish instead that wasn’t quite exact but smaller than my usual traybake tin which is 30cm.

It was really nice. Dc loved it. I served it warm with custard as a pudding. I have so many tins/Pyrex that I’m not buying another for this recipe Smile

From Good Things In England - Florence White 1932

"The recipe for Dorset Apple Cake was sent in by a Miss Annette Vipan, ‘as it was given to me by a farmer’s wife in this village, North Chideock.’ As was often the case with old family recipes, there were no weights, so Miss Vipan suggested the quantities:
INGREDIENTS: Apple and flour, equal quantities; fat half the quantity, sugar half the quantity; salt, a pinch; baking powder 3 teaspoonfuls to the lb. of flour; milk enough to make a firm dough.
TIME: To bake 3/4 to 1 hour.
METHOD: Rub the fat into the flour, add the salt and baking powder, mix the sugar with the pared and chopped apple,stir into the flour mixture, make into a firm dough with the milk. Make into a flat cake 3/4 inch thick, bake in a round tin, 3/4 to 1 hour.Cut open, butter well and eat hot. Some eat it hot or cold with cream."

My mother (who was from Dorset) made it like this, but would have used SR flour and no baking powder, she presumably got the recipe from her mother. It was served with clotted cream or hot with custard.
