Madeira Sauce and Fondant Potatoes

Last NYE we went out for a pub meal and I had a delicious meal of beef tenderloin, Cavallo Navarro, foie gras and fondant potatoes with a Madeira Sauce.
It was beautiful, the whole thing, but what really made it was the fondant potatoes and the madeira sauce.
I've tried to replicate the sauce without any success. Does anyone have a recipe for a simple yet delicious Madeira sauce?
Same for Fondant Potatoes as well if possible...?
I did try and contact the pub where we had the meal, but the very talented young lady who was the chef that night had moved on.

Fondant Potatoes. We used this one and it turned out well.

The simplest method is SLOWLY cook finely chopped shallots in plenty of butter over a very gentle heat, s+p, then add Madeira & raise the heat.
Perhaps add fresh herbs that go with the meat.

You can also use Marsala .

I'm assuming I'd just swap the masala for madeira as I really don't like masala!
