I want to start making my own bread: where do I begin?

Sourdough seems way too scientific to me, I am not such an advanced baker so would like to start with a simple loaf. What recipes/types of bread should I begin with?
I own a 24cm LC dutch oven.
Used to have a breadmaker but sold it as we used it once in 5 years.

I’ve got the basic Panasonic breadmaker. Mostly now I use the bread mixes where you just add oil/butter and water! I also use mine for making jam! I did buy a book on bread making but I found all the hand kneading too much so now the breadmaker does it!

This is my recipe, works every time. I make a loaf every few days.

It makes sense to me, but let me know if you need any tweaking.

Bread recipe

100ml of warm water & 1 sachet of yeast, pinch of sugar - leave to rise for 10 mins

Then…

270ml of warm water
Add 500g bread flour
2 teaspoon of salt
Mix together

Rest for 2hrs at room temp, dampen tea towel slightly

Transfer dough to well floured surface, fold a few times, make into a ball

Heat oven to 220 degrees & put cast iron pot in with lid
Let dough rest for 30 mins

Transfer dough to pot, make a + in the middle

Bake for 30 mins

Remove lid and bake for another 10 mins

Have a look at Bake with Jack on YouTube. I found him very watchable and have made some lovely bread following his methods.
