This afternoon I made a leek and Stilton quiche (BBC, Mary Berry) ready for guests coming for dinner tomorrow. I thought I was being well organised by making it today, so I’ve got less to do tomorrow. BUT I’ve just seen on the bottom of the recipe that it says “can be made 8 hours ahead and reheated”. I’ve put it in the bottom of the fridge but it will be over 24 hours before we actually eat it. Is it going to poison everyone?? Should I freeze it overnight? It’s got eggs, cream and Stilton in it. I’m tempted just to leave it in the fridge but is it too risky??

Fridge is fine. Enjoy!

It will be fine. Do reheat it before serving though as cold refrigerated pastry isn't very nice.

It will be fine health-wise, the 8 hours suggestion is probably more to do with the contents making the pastry soggy over a longer period.

Have you cooked it yet? If yes, the fridge will be fine. If not, I would cook it now, then cool and leave in the fridge overnight.

Yes all cooked and sitting in the bottom of the fridge. I read the 8 hours on the recipe as meaning it should be eaten within 8 hours, but I’m sure you’re all right. I’ll leave it where it is I think. Thanks all!

When you go to reheat it put it on a preheated metal tray in the oven to deal with any soggy bottom!
