Hit me with your diced beef ideas 💡

I have about 3kg in the freezer and need to shift some of it. My usual go to meals are all done in the slow cooker, Korean beef noodles, beef & broccoli noodles, curry, chilli con carne, hot beef ciabatta, stew/casseroles or stroganoff. Would like to try something new, preferably in the slow cooker. Any ideas?

Goulash?
Boston casserole? (One pot dish of Ragout, pasta and cubed sharp cheddar)

Steak and ale pie filling

massaman curry

@PrizedPickledPopcorn both excellent ideas thank you! Haven't had goulash in ages and my friend gifted me some amazing posh paprika recently so that's definitely on the list. Do you have a recipe for the Boston casserole? Google is just giving me sausage/bacon versions.

@CalliopePlantain OMG, how did I forget steak pie?! Thank you! Although as a Scot I controversialy add sausage and my pies aren't really pies as they have no bottom 🙈.
I have never made a successful massaman, they have always been quite bland but I have loved them when cooked by others so I may have another go. Thank you 😊

Beef goulash - peppers, tomatoes, onions, paprika, cumin, sour cream - serve with orzo or mash.

Beef casserole with red wine, carrots, shallots, mushrooms, garlic, herbs with fresh made dumplings on top. Cook in slow cooker or oven then add the fresh dumplings on top and put in oven for 15-20 mins while they cook

Hairy bikers beef curry

Steak pie - beef, onions or shallots, chopped streaky bacon or lardons, mushrooms, dark ale or Guinness. Cook in slow cooker then put a lid of puff pastry on top and bake in oven for 20 mins

Classic all-in-one casserole - beef with diced potatoes, onions, carrots, swede or turnip, barley, herbs and garlic, white pepper, cavolo, add peas towards the end of cooking

Just make it like a bolognese . Sink raw pasta shells into it and push them down. Maybe add a splash of water so it’s definitely covered. Lid on, low heat. It takes longer than you think for the pasta to cook, maybe about 45 min?

When it’s ready stir the cubed cheese in, rest 5mins, and serve. The cheese softens but doesn’t get mixed in. It’s quite firm, not sloppy.

Beef stifado. In mine I put: plenty of olive oil, Shallots (browned in red wine vinegar and a bit of sugar), red wine, tinned tomatoes, tomato puree, cinnamon (stick and/or powder), fresh rosemary and season to taste. All of the above stewed until thick and syrupy/as long as you can.

If you can locate Dean Edwards’ slow cooked massaman curry (can also do in oven) it’s the BEST

Also slow cooked ragus and chillis with diced beef are delicious

TheLadyIsAVamp · 25/09/2025 22:13

@ScrimpAndShave I adore Dean, the Korean beef in my OP.is one of his recipes so I will definitely look that up.

It’s in his Cook Slow book (not the healthy version of the book, the other one!)
