Recipes with "Ras El Hanout" spice, please!

Right.. I bought this spice mix a few days ago (Ras El hanout- sp?).Sounds yummy..but now I don't quite know what to do with it!

I've got some butternut squash, a few cans of chickpeas, sweetcorn and other bits and bobs. Surely there must be a yummy way of combining these

help oh clever ladies out there!

it is nice with chicken (maybe you don't eat meat?)

you could make some sort of pattties. or just roast veg with it sprinkled on.

oh, we definitely are carnivores in this house.. I just mentioned the vegetables because they seemed like the ideal ingred. for something vaguely maroccan

caramelized pork or chicken.

Cut in strips (keep fatty skin on)
stir fry to brown meat
Add heaped teaspoon ras el hanout and fry another 5 to 10 mn
Add 2 tbsp honey and a little water and stir constantly to caramelize. season with pepper and serve with rice

use as seasoning for minestrone type soup/any veggie stew.

Chop vegetables and stir fry in good quality olive oil with onion, garlic and chopped parsley and coriander.
Add 2 tomatoes, 1 tsp ras el hanout and cover with water. Simmer gently.

If you make a thick stew then serve with durum wheat semolina or bulgur and you've got yourself a couscous,

On the atlantic coast (Safi/essaouira) they make baked fish like this:

Put any white fish in baking tray and baste with ras el hanout mixed with olive oil.
Bake in oven untill moist.

While it's baking, make onion sauce on the stove:

  • 2 finely sliced onions + olive oil+ saffron+ ginger powder+ salt and pepper+ chopped coriander+handful raisins
Cover with a little water and simmer 30mn.

When sauce all gooey, spoon over fish
