For years I've made shoite boxty. My potato cakes are fab but Boxty just foxes me.

Can any one help?

Doodle, is this a regional dish ?

feetheart · 02/06/2008 22:27

Sorry no but I'm watching with HUGE interest

Irish.

I know feelheart. It's not the most knicker gripping thread, is it? But it's important to me.

I must get out more

Somebody must have a good recipe for this!

Just tried it again and it stuck to the pan and the grated potato was still in grated pieces after cooking.

Pants.

The pan has to be really hot and well oiled.

Doodle2U · 05/06/2008 20:26

Carm, the pan was smoking. I used olive oil. Have you made it successfully? Did you use buttermilk? Some recipes say yes to it and others just say potato, flour & salt - no fluid at all???

I wouldn't use buttermilk but that said I have only made it once or twice and that was ages ago so I'm not really sure tbh

Ah well, thanks for taking the time to respond.

Might give this up as a bad job and stick with potato cakes!
