Been googling but none inspiring me. Please hit me with your favourite recipes.

Will serve with guacamole, sour cream, grated cheese, sweet potato wedges.

Felicity Cloake’s chilli starts with rehydrating a range of dried chillis to create a base. There’s a fruity chilli like ancho for nice chilli flavour, smoky chipotles, and then a really hot chilli for spice. You can vary ratios to suit you. It adds much more complexity and makes a a dish really celebrating chillis than adding a spoon of chilli powder does. The sauce it makes is so rich and delicious.

Came on to say just this. I don’t either bother with the “burning” just shove it all in the slow cooker and 6-8 hours later on low heat, tada. Mmmmmm!

Another vote for the burnt aubergine bbc one, it’s incredible. Fed to unsuspecting meat eaters and they had no idea it was veggie!

Some great suggestions thanks. The BBC burnt aubergine seems a winner and I like the idea of chucking it all in the slow cooker.

I usually make Thomasina Miers' beef chilli which has a few different chillis in and has an amazing flavour. Sounds like Felicity Cloakes' veggie version will be similarly tasty.
