I have quite a lot of random game in my freezer that I need to use up. I have no idea what I have, other than I think some is partridge and some pheasant. May also be some quail. All is unlabelled, don't know whether it is boned or not. Has anyone got a good, fairly foolproof recipe for a mixed game casserole/stew/something? Thinking a red wine base, but really would love pretty much any suggestions that anyone has. TIa 😊

There is very little meat on quail and partridge, they are best roasted whole.
For pheasant I always just remove the breasts and pan fry these, add apple, cider onion, pancetta and cream and then put a lid on the pan and cook gently for 20 minutes.

Pheasant can replace chicken. It can be a bit dry, though, so be aware of that.

If you have the time, a raised game pie is worth making. Looks spectacular.

Liking the cider, pancetra and cream for pheasant. Will try that if I have pheasant breast in my game haul. I have about 3 or 4 kg of unidentified frozen packages, so game pie might work. A proper raised pie is beyond my capabilities - I remember my mum making one once for Christmas. Just the once 🤣
