rhubarb - i've got lots, can i make jam with it?

don't think it does jam

just stew it

or chop it into 1cm bits and freeze it then get it out when you are feeling more inspired.

I'm not a jam maker but we have an adopted granny who gives us lots of home made jam. My favourite is her rhubarb and strawberry jam.

I used to have a recipe for Rhubarb Jam, which was absolutely delish and has disappeared. It was swedish and I know it had lemon juice in it.

Rhubarb and Ginger Jam

1.5 kg Rhubarb (prepared weight)
1.5 kg sugar
Juice 3 lemons
25g root ginger

Wash rhubarb and cut into small chunks. Layer with sugar in deep bowl, add lemon juice and leave overnight.

Put contents of bowl into pan, with bruised ginger in muslin bag. Bring to boil and boil until set.

I do rhubarb and orange jam. It's a wartime recipe from my Granny called mock apricot (apparently you could get oranges but not apricots). It's lovely, one of my favourites. I'll dig out the recipe and post it later. Have done rhubarb and ginger as well in the past.

I think with any the key is to make sure the rhubarb is really mushy before adding the sugar or else you get crystallised lumps of rhubarb

oooh thanks, going to make some of each! (Fallenmadonna & northender's. Quite excited perhaps i need to get out more - jam was not even a bit interesting until recently.
