Butternut squash and chilli soup

Last autumn I made a version of the Bol power soup and it was really good. I based it on the ingredients list

butternut squash
carrots
cannellini beans
red lentils
sweet potato
tumeric
ginger
coriander
chilli flakes
black pepper
mango
veg stock

Im going to make a big batch next week, what could I add to increase the protein and fibre or do you think it’s fairly decent a lunch as it is?

It sounds delicious already but I’d add onions and garlic.

I was considering a base of onion and garlic. I can’t remember if I did last year. I can’t think it will change the flavour massively.

@familyissues12345mine too! The Bol one is really good but pricey for a regular lunch. I froze it last year and it kept and reheated really well.

I make soup regularly in my soup kettle ~ my favourite additions are coconut milk, tin of sweetcorn added after it’s all finished cooking so it’s not blended for some bulk.
you can add some celery too as it’ll add fibre but doesn’t affect the flavour too much

Yes its just runny yoghurt. I buy it in thePolish shop or Sainsbury's.
